According to the NKR agency's research, by 2026, the foodservice market turnover — part of the HoReCa (Hotel, Restaurant, Catering) sector — will exceed 6 trillion rubles, showing growth of more than 10%. However, experts warn that this monetary surge is merely a consequence of inflation and an increase in the average check. The actual profitability of establishments is declining, leading to a harsh market shakeout.
In just the first quarter of 2026 alone, 11,200 companies closed across the country (a 31% increase compared to the previous year), while nearly 1,500 more new players opened their doors. In Moscow, rotation reached its peak: 330 closures versus 455 openings within six months.
